Slow braising turns pork shoulder into tender shreds while hoisin, two kinds of soy sauce, garlic, ginger, and whole spices build a savory-sweet sauce. A final uncovered roast caramelizes the edges before the braising liquid is thickened into a glossy glaze.

Serve it family-style with Peking duck-style pancakes, tortillas, bao, rice, or noodles and let everyone add their own crunchy vegetables and toppings.

    Preheat the oven to 325°F (160°C), or 275°F (140°C) for a fan-forced oven.

    Pat the pork dry with paper towels and place it in a large, heavy-based Dutch oven or another ovenproof pot with a lid.

    In a large bowl, combine the hoisin sauce, soy sauce, dark soy sauce, oyster sauce, brown sugar, honey, rice vinegar, sesame oil, garlic, ginger, chicken stock, black pepper, and Chinese five-spice.

    Pour the sauce over the pork. Add the star anise and cinnamon stick, then cover the pot tightly with the lid.

    Bake for 4 hours, turning the pork halfway through. It is ready when it pulls apart easily with two forks. If needed, continue baking in 30-minute intervals until fork-tender.

    Remove the lid and return the pork to the oven for 30 minutes, until lightly caramelized around the edges.

    Mix the cornstarch with the water. Stir the slurry into the cooking liquid, place the Dutch oven over medium heat on the stovetop, and simmer for 2 to 5 minutes, stirring occasionally, until the liquid becomes a thick, glossy sauce.

    Remove 185 ml (3/4 cup) of the finished sauce and set it aside for serving.

    Discard the cinnamon stick and star anise. Shred the pork directly in the Dutch oven with two forks and toss it through the remaining sauce until thoroughly coated.

    Prepare your chosen serving base according to its package instructions. Serve the pulled pork with the reserved sauce, cucumber, carrot, green onion, cilantro, red onion, optional Thai chiles, optional sriracha mayo, and sesame seeds.
