Easy Brazilian Cheese Bread

This is one of our Saturday breakfast staples. It is fast enough that I can make it before the day really starts, and it always disappears from the table.
We usually eat it warm, split open, and filled with something. Creamy cheese is the classic option in our house, but Nutella is my daughter’s favorite. It also works well when people come over just for coffee, because it feels like a proper little thing to serve without turning the visit into a big meal.
The batter is made in a blender and baked in a mini muffin tin, so this is the easy version of pao de queijo. You still get the chewy center and the lightly crisp outside.

Heat the oven to 400°F (205°C).

Lightly grease the wells of a nonstick mini muffin tin with olive oil.

Add the egg, olive oil, milk, sour cassava flour, feta, and salt to a blender.

Blend until the batter is smooth, stopping once to scrape the sides if needed.

Pour the batter into the prepared mini muffin tin, filling each well almost to the top and leaving about 1/8 inch of space.

Bake for 15 to 20 minutes, until the cheese bread is puffed, lightly browned, and set.

Let them cool in the tin for a few minutes, then move them to a rack or serve them warm.
Two things that matter
These are best fresh and warm, when the outside is still a little crisp and the inside is chewy.
For breakfast, split them open and fill with creamy cheese, butter, or Nutella.
Leftovers can be kept in an airtight container at room temperature for 1 day or in the fridge for up to 1 week. Reheat briefly in the microwave for a softer texture, or in a toaster oven or low oven if you want the outside to crisp again.
